Oyster Etiquette: From Shell to Table

A relaxed approach to serving oysters, with simple accompaniments and attention to freshness and handling.

Prepare the table first: small plates, napkins, a bowl for shells, and a stable platter. Keep garnishes separate so everyone can season their own portion.

If opening oysters yourself, use an oyster knife and a protective glove or folded towel. Work on a stable surface with the blade directed away from your hand. If you are unfamiliar with shucking, ask your fishmonger for a demonstration.

Raw oysters carry a foodborne-illness risk even when they look fresh. Cooking thoroughly is the safer choice, especially for people at higher risk. Lemon juice and alcohol do not make raw shellfish safe. Keep seafood refrigerated and follow the supplier’s handling guidance.

For the tasting, use a small fork to loosen the oyster and take a modest bite. There is no need for elaborate rules: focus on the texture and on which accompaniments you enjoy.
