Create a small seafood table with contrasting textures, restrained garnishes, and something refreshing to sip.
Think in three parts: the oyster, a crisp or chewy accompaniment, and a refreshing drink. Start with small portions, leaving space on the table for conversation rather than a crowded display.
Try a thin slice of rye bread or a plain cracker. Put butter, lemon, and a shallot dressing in separate dishes so each guest can decide how much to add. Taste before seasoning.
A dry sparkling wine is one possible contrast to a rich seafood bite. For an alcohol-free table, offer sparkling water with lemon on the side. There is no need to commit the whole group to one pairing.
Keep cold seafood chilled until serving and bring out smaller batches as needed. Cooking oysters thoroughly is the safer option; acidity and alcohol are flavour choices, not substitutes for safe preparation.
